Who doesn't like a good pork scratchings with your pint or gin and tonic in your local pub or bar? OK vegans and vegetarians. If only we could make everyone happy... Amaze your friends and family by making your own pork scratchings at home with our simple recipe below.

Prep and Cooking time: 2 - 2 1/2 hours
Ingredients
1 kg - Pork Rind with Fat
1 tablespoon - Salt
½ teaspoon - Thyme (or to taste)
Apple sauce
Method
Preheat oven to 170ºC.
Using scissors or sharp butchers knife, cut the pork rind into chunks and place in a large roasting tray, put in the oven and cook for 15 minutes.
As the pork scratchings cook, spoon out the fat at regular intervals during cooking. (Tip – this fat is great for roasting potatoes).
After 20 minutes, turn down the oven to 150ºC and bake for 1 – 2 hours, until the scratchings become crispy. Keep checking to ensure you get the best results.
Drain the scratchings on some kitchen towel.
Grind the thyme with sea salt and sprinkle onto the cooling pork scratchings.
Serve warm or cold with a good portion of apple sauce for dipping and a pint of ale or a gin and tonic.
